This is the monthly recipe blog. I love to cook and love sharing some of my favorite recipes. This month I am choosing two breakfast recipes. There is really no rhyme or reason why I choose breakfast. Perhaps, because my son will be home from college soon. He and I have a tradition on Sunday mornings. We enjoy a nice brunch together, sometimes, with Mimosas. I love to experiment with different recipes. The May breakfast recipes are apple pancakes and beer bread. The beer bread is so easy to make and tastes just like English muffin bread. The apple pancakes are also simple to make and look really impressive.
I think Sundays are the perfect time for a leisurely breakfast, reading the paper and sipping coffee. Maybe you will want to start a traditions.
Beer Bread
3 cups self-rising flour
1/3 cup sugar
1 can beer
Preheat oven to 350 degrees. Grease and flour a loaf pan.Put the ingredients into a bowl and mix together. Beat with an electric mixer a few minutes until well blended. Bake at 350 degrees for 50 minutes.
Apple Pancakes
2 -3 apples
4 Tablespoons butter
4 eggs
¾ cup flour
¾ cup milk
2 Tablespoons sugar
2 Tablespoons cinnamon
Salt
Preheat oven to 400 degrees. Get 2 round cake pans. Put 2 Tablespoons of butter into each pan and melt the butter in the oven. Remove pans. Peel and slice the apples. Put the slices in the bottom of the heated pans. With an electric mix, beat the eggs, flour, salt and milk together. Pour the mixture over the apples, splitting the mixture between the two pans. Mix together the sugar and cinnamon. Sprinkle over the apple mixture. Bake 20 -25 minutes .Can be served with or without syrup.
