Thanksgiving is a time for gratitude. For me, it is a time family gets together to prepare, share and enjoy a wonderful feast. I love to cook and I try to combine new recipes with some tried and true ones. Our family has some thanksgiving recipes that have become traditions. My Mom would always make her special green beans and her 7 layer salad. My boys love my sweet potato recipe. A Thanksgiving meal would not be complete without it. Today, I am going to share this recipe. Do not count calories when you make this. Happy Cooking!
Sweet Potato Classic
5 large sweet potatoes ¼ cup white sugar
¼ teaspoon salt 2 tablespoons heavy cream
¼ cup butter ¼ cup, butter, softened
2 eggs 3 tablespoons all-purpose flour
1 teaspoon vanilla extract ¾ cup packed light brown sugar
½ teaspoon ground cinnamon ½ cup chopped pecans
Directions
1. Preheat oven to 350 degrees. Lightly grease a 9 x 13 inch baking pan. Depending on the size of the sweet potatoes, sometimes I use a smaller pan.
2. Bake sweet potatoes 35 minutes in the oven, or until they begin to soften. Cool slightly, peel and mush.
3. In a large bowl. Mix the mashed sweet potatoes, salt, butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. I add the eggs one at a time. If the mixture seems too runny, I only add 1 egg. Transfer to the prepared baking dish.
4. In a medium bowl, combine the butter, flour, brown sugar and chopped pecans. Mix until it is the consistency of course meal. Sprinkle this over the sweet potato mixture.
5. Bake 30 minutes in the preheated oven, until the topping is crisp and lightly browned.
This tastes great the next day reheated, too.
